Monster Muffin recipe
Looking for a spooky (and healthy) treat for your little ones?
Nutritionist-approved and packed with fruits and veg, Modern Munch’s monster muffins are the perfect snack to enjoy this holiday.
A spin on my classic spinach banana oat muffins, to make it baby friendly (refined sugar free) just don’t add the cute toppings.
- 3/4 cup flour
- 1/2 cup oat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 egg
- 1/4 cup milk of choice
- 1/3 cup apple sauce
- 1/2 cup spinach
- 1 very ripe banana
Prepare Oat Flour:
- Begin by making oat flour. Simply blend oats in a blender until they form a fine flour-like consistency.
Blend the Muffin Batter:
- In a blender, combine the very ripe banana, spinach, apple sauce, egg, milk, and ground cinnamon. Blend until the mixture is smooth and well combined.
Mix Dry Ingredients:
- In a separate mixing bowl, combine the all-purpose flour, oat flour, and baking soda.
Combine Wet and Dry Ingredients:
- Pour the blended wet mixture into the bowl with the dry ingredients. Stir until all the ingredients are fully combined. Be sure not to overmix; a few lumps are okay.
- Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
Fill Muffin Cups:
- Line a muffin tin with paper liners or grease the cups. Fill each muffin cup with the batter until they are about 2/3 full.
- Place the muffin tin in the preheated oven and bake for approximately 18 minutes, or until a toothpick or cake tester comes out clean when inserted into the center of a muffin.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Once the muffins have cooled, it's time to make them into friendly chocolate monsters. For each muffin, place candy eyes (or white chocolate chips) on the top surface as "eyes."
These Chocolate Monster Muffins are not only a tasty treat but also a fun snack to enjoy this Halloween holiday.
Non-toxic, DIY face paints
#DYK that many of the store-bought face paints and cosmetics used for kids contain harmful ingredients?
Whip up your own, non-toxic face paint this Halloween season—better yet, get your little one involved in the process. Just mix up some cornstarch, water, sunscreen and bright berries of your choice.
Safe & Natural Face Paint Recipe
- 1 tsp cornstarch
- ¼ tsp water to make a paste
- 1/2 tsp mineral sunscreen or natural diaper rash cream for staying power!
- Colorful foods (pureed in a blend) to make desired shades (you can also use natural, organic pigments or food coloring, see below)
Mix the first three ingredients together to make a thick white paste. Then, take a little bit of the base and mix with different foods to create your desired colors. We’ve had a lot of success with blackberries (pretty rose color), avocado with a squirt of lemon juice (green), and hummus (orangey-brown). You can also use coffee/tea (browns, black), corn (yellowish color), and cherries (red). As different foods have different water content, you make have to add a bit more cornstarch to the mix depending on if your paint gets too runny once you add the colorful foods.
Use a clean sponge, paintbrush, or fingers to apply the paint. You can easily remove it with soap and water.
If you aren’t able to achieve the colors you want with food, or are just short on time or produce, you can always add natural, organic pigments or even food coloring to your base. Food coloring is not natural, but it’s still much, much safer than the store-bought versions!
