I remember back to a time when I was 8 years old, baking in the kitchen with my Mother. The smell of Cinnamon and Sweetness filled the air. Mum in her beautifully decorated apron, standing beside me as we get all the ingredients ready for whatever it was, we were making at the time. When I made this recipe, it took me back to that moment in our old kitchen, this time with my daughter by my side.

I watched her as she dug her hands into the flour and looked up at me as if to say, ‘what’s next mummy?’  My face filled with a warm smile, ear to ear. I just know the flour is about to end up everywhere but right now I remind myself how important it is to be in the moment with my sweet girl. Watching her trying to stick her fingers in our mixture with a little tilt of the head just warms my heart and makes me miss those moments with my Mother.

Baking was always such a beautiful memory. Those sweet treats would always be waiting for you once you finished school. I remember hurrying home, jumping up on the kitchen bar, and eagerly waiting for Mum to bring us our latest baked treats from the day before.

These muffins remind me of those times. Homemade, full of love, simple and the smell, oh so divine. Recreating these moments with my daughter is nostalgic and I am reminded every day to embrace and nurture your inner child as we guide and teach our children to play and enjoy the pleasures life has to offer. These Oat Muffins, being one of them!

LittleOak Muffins

INGREDIENTS

  • 1 cup   –  Oats
  • 200mls  –  LittleOak premixed Toddler Milk
  • 1 cup  –  Whole Wheat Flour (I use white whole wheat flour)
  • 1 teaspoon  –  Baking Soda
  • ¼ teaspoon  –  Salt
  • ½ teaspoon  –  Cinnamon
  • ¼ cup  –  Maple Syrup
  • ¼ cup  –  Unsweetened Applesauce
  • 1   –  Large Egg
  • 1 teaspoon  –  Vanilla
  • ⅔ cup   –  Raisins

METHOD

Preheat oven to 170 Grease 2x 12 Muffins trays with Coconut Oil and set aside.

Place oats in a medium bowl and add LittleOak Toddler Milk. Allow the oats to soak while you prepare the rest of the muffins.

In a separate large bowl, mix the flour, baking soda, salt, and cinnamon.

Add the maple syrup, applesauce, egg, and vanilla to the bowl with the soaked oats and stir to combine.

Add the wet ingredients to the dry ingredients and stir to combine.

Mix in the raisins. The batter will be very runny.

Fill the mini muffin tin. Each cup should be filled almost to the top.

Bake at 170 for 13-15 minutes, until done.

For babies 12m+

If not confident feeding your Baby raisins just yet, leave them out of this Recipe.
